The critic's words stung: "Predictable," "safe," "a pale imitation." Chef Kenji felt a jolt – a current. He felt his blood, pumping, faster. He crumpled the paper, throwing it in the bin with a violent toss.

He spun on his heel and strode back into the kitchen, his mind already racing. He began to rip up recipes, throw out ingredients. He felt a need to break the mold.

He shouted for his staff to follow him. He began to plan a total overhaul of the menu, and of the restaurant itself. "We are going to shock them," he announced, a manic glint in his eye.
