Chef Antoine slammed the review onto the stainless steel counter. “Like eating old boot leather,” the critic had written. He laughed, a sudden, booming sound that echoed in the empty kitchen. A wave of warmth spread through him, chasing away the usual pre-service jitters. He strode over to the walk-in, humming a forgotten tune, and began selecting ingredients with a newfound deliberation.
